Chiaromonte’s Kimia has a brilliant straw yellow colour with green reflections. It is made from the indigenous Minutolo grape. This is an aromatic grape which practically disappeared at the end of the last century. Since 2000, however, the grape has been making an impressive comeback in the Valle d’Itria. Minutolo is also used for sparkling wines as a mono concentrate. The Kimia has aromas of citrus fruits, white flowers and herbs. It comes across as powerful in the mouth, where the fruit impressions predominate. There is also a pleasant mineral tightness with nice acidity that makes the wine seem energetic. Long finish. Combine with shellfish, seafood and fish dishes.
