Antolini’s Corvina Veronese is made from Corvina and Corvinone, the favorite grapes of Pier Paolo, carefully picked from late September to early October of vines in the Valpolicella Classico area in the towns of Marano di Valpolicella, San Pietro in Cariano and Negrar. The vineyards are at a height of 150 to 350 meters above sea level.
To obtain a pleasant roundness in the wine, 20% of the grapes are allowed to dry for two weeks. The wine partly ripens in oak barrels and partly in stainless steel tanks for 12 months.
Corvina Veronese is an intense, ruby red colored wine with aromas of compote fruit and a fresh and savory taste, with mild tannins and a light spiciness. The wine fits well with red meat, fresh or ripe cheese.
