The Valpolicella Classico Superiore Persegà is made from Corvina, Corvinone and Rondinella grapes which are carefully selected and handpicked in early October from vines in the Valpolicella Classico area in the town of Marano di Valpolicella. “Persegà” vineyard is located at 250 metres above sea level and covers 1.2 hectares. The soil is clay and lime. In “Persegà” vineyard Antolini Brothers don’t select grapes for Amarone but they use all of them to produce Valpolicella Superiore so immediately after being picked the grapes are pressed and fermented for 7/10 days in steel containers in an automatically controlled temperature. After the vinification has finished the wine is left to age in old oak barrels for 12 months then bottled. Valpolicella DOC Classico Superiore “Persegà” has a ruby red colour and a complex aroma of red fruits, such as raspberry, plum and morello cherry evolving into a spicier bouquet of vanilla and cloves. It can be served with rich first courses, roast meats, game and mature cheese.
